The perfect roasted potatoes are crispy on the outside with soft and creamy centers. Whether you call them oven-roasted potatoes, crispy roasted potatoes, or just roast potatoes, they are easy to make and go great with any meal. In fact, you can even turn them into a meal by adding meat and other roasted vegetables.

Roasting time for potatoes vary depending on the size and how you cook them. So, cooking potatoes on a baking sheet will not take the same amount of time as those boiled on the stove in water before being roasted. Small cubed potatoes will take about 10 to 15 minutes to boil. You do not have to peel them first, but you can if you want to.

Sometimes a roasted potato recipe will call for frying your potatoes in hot oil before roasting them in the oven. Other recipes use high heat to roast potatoes to a golden brown with crispy skin after boiling them. Just put the sheet pan on the upper oven rack.
