Grilled Steak with Onion & Blue Cheese Sauce
- 2 rib eye or top sirloin steaks (4 ounces/115g each)
- coarse sea salt, garlic powder and coarsely ground black pepper to taste
- 4 TBS butter
- 1 medium white onion, thinly sliced
- 1/2 cup (120ml) heavy cream (whipping cream in North America)
- 2 tsp Worcestershire Sauce
- 1/3 cup (40g) crumbled blue cheese (I used Danish)
I could happily become a vegetarian if it weren’t for steak. I love a good steak, cooked properly. Here are some other ways that I like to enjoy it which you might also like!
PAN SEARED STEAKS WITH GARLIC BUTTER – Tender and juicy perfectly seared, cooked and flavored steak. The garlic butter goes perfectly. A cast iron skillet works best, but if you don’t have one you can use any skillet with a heavy bottom that can handle a high heat well. Steak and garlic are perfect partners.
GRILLED STEAK SANDWICH - This is a delicious knife and fork sandwich, with a lovely garlic toasted sour dough, slathered with a horseradish mayo and then topped with fresh rocket leaves (baby arugula), perfectly seasoned and cooked steaks, some melty cheese and grilled portabella mushrooms to finish them off on top. These sandwiches make for a light and very tasty supper on their own, but add a few chips and some onions rings and even the heartiest eater will approve!
Grilled Steak with Onion & Blue Cheese Sauce
- 2 rib eye or top sirloin steaks (4 ounces/115g each)

- 4 TBS butter
- 1 medium white onion, thinly sliced

- Pat the steaks dry and then generously season on both sides with garlic powder (not salt), salt and black pepper.
- Melt half of the butter in a heavy bottomed skillet over medium high heat. Once it begins to foam, add the steaks, cut sides down.
- Cook three to four minutes per side, until nicely browned. Remove from the skillet and allow to rest, loosely tented with foil while you make the sauce.
- To make the sauce, using a clean skillet, add the butter over medium high heat. Add the onions. Cook, stirring occasionally until they just start to brown, about 7 to 8 minutes
- Pour in the cream and season lightly with salt and black pepper.
- Add the Worcestershire sauce and allow to bubble up. Stir in the blue cheese and whisk to melt. Remove from the heat. Taste and adjust seasoning as required.
- Place the steaks onto two heated plates and serve with some of the onion cheese sauce spooned over top.
