Easy Cinnamon Peach Cobbler

 

My father was coming over for supper last night. I was really looking forward to having him. It is not something that I get to do very often.   He lives with my sister now and she feeds him very well.  Occasionally however, she has a night off and goes somewhere with her husband and I get to have dad here.
I always like to make my dad a special dessert.  He always looks for something sweet at the end of every meal.  He has a sweet tooth.  I think I inherited it.  😟

Easy Cinnamon Peach Cobbler is a quick and easy dessert to make, not to mention delicious. It uses simple store cupboard ingredients and goes together in a flash.  Generally speaking I always have what I need to make it in my refrigerator and larder, which also makes it a great dessert to throw together when you have unexpected company coming, without having to shoot out to the shops!
I don’t know if you are like me, but when I have company coming I go mad cleaning.  My house isn’t really dirty anyways, but the idea of company coming sparks in me an extra burst of cleaning energy! Everything must be spotless!  I inherited that from my mom!  😟
Lol, I am what I am.  In any case, this is the dessert I made for him and he really enjoyed it. It went own a real treat with a scoop of vanilla ice cream on top! Nobody was complaining!

WHAT YOU NEED TO MAKE EASY CINNAMON PEACH COBBLER

Just a few simple ingredients. You will be surprised at just how simple this really  is! You will need a large deep 9-10 inch pie dish.
  • 1 can of refrigerated cinnamon rolls (save the icing)
  • 21oz (540ml) can of peach pie filling
  • 2 TBS butter, melted
  • 1/2 tsp ground cinnamon, divided
  • 3 TBS soft light brown sugar, divided

I used the Pillsbury Grands Cinnamon Rolls, but any refrigerated tinned cinnamon roll will work.  In the U.K. you can use the Jus Rol Cinnamon swirls which are found in the refrigerated aisle section of the shops, near the butter and spreads.

I used the Lucky Leaf Peach Pie Filling.  One thing I like about the Lucky Leaf fruit fillings is that they contain NO high fructose syrup and are gluten free.  They use simple ingredients that you can pronounce and that you recognize. I wish more food manufacturer would take their lead!

I used salted butter, soft light brown sugar and a reputable ground cinnamon from a reputable supplier. Those bargain ones that you will often find in the foreign food aisles, can have any unspecified types of chemicals and ingredients in them. There was recently a huge recall of ground cinnamon because they contained inappropriate ingredients that were not safe to ingest.

HOW TO MAKE EASY CINNAMON PEACH COBBLER
This really is one of the simplest desserts to make and perfect for when you have unexpected company drop by. If you keep the ingredients on hand, you are never very far from a simple to make delicious dessert!  The hardest part is opening the tin of cinnamon rolls!



Preheat the oven to 350*F/180*C/ gas mark 4. Butter a 10-inch, deep pie dish, or 1.5 liter/1.5 quart baking dish.

Cut the cinnamon rolls into 1-inch pieces. Place them into the pie dish, spreading them out evenly. Drizzle with the melted butter. Sprinkle with half of the ground cinnamon and 1 TBS of brown sugar.


Spoon half of the tin of pie filling over top, chopping up some of the larger pieces of apple. Stir together with the cinnamon rolls and spread out evenly. Sprinkle with 1 TBS of the brown sugar. Spread the remaining pie filling over top evenly. Sprinkle with the last TBS of brown sugar and the remaining ground cinnamon.

Easy Cinnamon Peach Cobbler 
Bake in the preheated oven for 40 to 45 minutes, until the pie filling is bubbling, and the cinnamon bun pieces are golden brown on the edges. It should not be gooey in the center.


Remove from the oven. Slightly warm the icing from the tin of cinnamon rolls and drizzle it over top.


Serve warm, as is, spooned out into bowls. A scoop of vanilla ice cream on top goes very well! Refrigerate any leftovers.

This was so delicious, despite it being a bit of a cheat.  I am sure you could make a similar dessert using any type of fruit pie filling that works well with Cinnamon!

QUICK & EASY PEACH DUMPLINGSYou only need two peaches to make this lovely dessert, which means it is also a somewhat economical dessert. Two peaches. 8 servings?  There is nothing wrong with that! Quick and easy these are an incredibly tasty dessert option! Soft and gooey on the bottom, crisp and sugary on top. These are crazy delicious!


PEACH CRUNCH CAKE - This is a bit of a cheat really. It uses only five store cupboard ingredients, which are likely things you already have in the house. Tinned sliced peaches, a vanilla cake mix, butter, soft light brown sugar and chopped walnuts . . .  that’s it! Everything gets layered in a dish, butter gets dabbed on top, then brown sugar and the walnuts.  Somehow magically it becomes a scrumptious peach cake during baking with a crunchy walnut topping. Beautiful served warm with some ice cream on top!
