Egg in the Hole Bacon Sandwich 
On days when I don’t have a lot of time to cook, I can be somewhat of a Breakfast For Supper kind of a gal.  I don’t often eat eggs in the  morning, but I do find that when it comes to creating a quick and easy supper, you can’t beat a good egg!
In omelets, in sandwiches, fried, etc. they always go down a real treat.  
This breakfast/dinner sandwich which I am sharing with you today was adapted from a cookbook by Taste of Home, entitled Cooking for Two, and was shared by Kallee Krong-McCreery of Escondido, CA.

It is a book that is filled with 317 quick and easy recipes for smaller households.  I am one of those smaller households and I love this book!  Every recipe looks delicious.
When you are a singleton or a small family you need all the help you can get when it comes to feeding yourself quick, easy and nutritious meals that are not wasteful! I hate food waste so anything that can help me prevent this is great!
This Egg in the Hole Bacon Sandwich Recipe is sized just for one and it is  easy to make and really delicious.  It is also easily adaptable to whatever you have in the house, bread, veg, protein, cheese, etc.  You can also multiply the recipe easily to feed more if you wish!

WHAT YOU NEED TO MAKE EGG IN THE HOLE BACON SANDWICH


Just a few simple every day ingredients. There is nothing complicated about this sandwich!
  • 2 slices of sourdough bread
  • 1 TBS full fat mayonnaise
  • 1 large free range egg
  • 1 slice of sharp cheddar cheese
  • 2 cooked rashers of streaky bacon
  • salt and black pepper to taste
  • hot sauce to taste

I actually did not have any sour dough bread in the house and so  I used two slices of this new Villaggio Rustico Multi-grain bread that I happened to have in the house.   It actually worked very well and made for a really deliciously rustic sandwich.
I only ever buy organic free range eggs. You can use any kind of egg you wish.  This is a personal choice of mine and a battle I choose to fight.  I consciously will not support an inhumane industry that uses caged hens.

I used a sharp white cheddar.  It didn’t come in slices so I sliced it to fit the toast.  You can use any kind of cheese you wish actually, just so long as it is a nice melting cheese.  Swiss would be nice with ham. 
I used thick cut streaky bacon. You could use ham, or sausage, smoked sausage, farmer’s sausage, breakfast sausage rounds, etc.  Boy, do I ever miss the British bacon.
You could also add sliced tomato,  thinly sliced onions, or even some grilled peppers, depending on how hungry you are and what you have to hand.

HOW TO MAKE EGG IN THE HOLE BACON SANDWICH

This is a really simple make.  You can also use two skillets and make two sandwiches instead of just one. Or, if you have a large electric griddle make even more.


Spread the mayonnaise on one side of each slice of the sourdough bread. Cut a hole from the center of one slice. (I used a 3 inch round cutter.)



Spray a large nonstick skillet with some cooking spray. Add the slice of bread with the cutout, mayonnaise side down. Heat and toast over medium low heat.



Once toasted flip the bread over and crack your egg into the hold in the middle of the bread.



Add the other slice of bread to the skillet, mayonnaise side down. Top with the slice of cheese and the rashers of bacon. Cover the skillet

Cook until the bread is toasted and the egg has set to your desire. The cheese should have melted and the bacon heated through. If need be, flip the bread with the egg in it to make sure it cooks through.



Place the slice of toasted bread with the cheese and bacon on a plate. Add a splash of hot sauce if desired. Top with the egg bread and season to taste. Serve hot. Sliced tomato can also be added to the center of the sandwich if you desire.

This was really delicious as written.  I loved that it was quite an adaptable recipe as well.  Easy to switch out the protein or use a different kind of cheese.  I think you could also spruce it up by adding sliced tomato or even some thin slices of red onion.

All in all this was simple to make and really delicious!  For a breakfast or for a light supper, I highly recommend!

I am a more of a breakfast for supper kind of a girl.  I do enjoy eggs as a simple supper dish. Here are some other favorites whether you eat them for breakfast or supper. Always delicious!
STEAK AND EGGS Steak, eggs, some seasonings and some fat. Its simple really. If you use the freshest and best that you can afford, you can’t go wrong! Simple and uncomplicated. Men love this combination.


CRISPY TORTILLA EGGS – This is probably one of my favorites. Fried eggs with a Mexican twist. Crisp tortilla, cheese, fried egg, two kinds of hot sauce, and spring onions. Simple to make you can make as many or as few of these as you like. So delicious I once cooked them three days in a row. I just couldn’t get enough of them!
