Dr. Sten Ekberg is the absolute best teacher on YouTube that I have found for reversing type 2 diabetes and losing fat. His lectures provide a deep understanding of the metabolic processes involved in fat loss or gain chiefly controlled by insulin. He details how too much insulin is associated with or causes many diseases. Strategies for lowering insulin include intermittent fasting, occasional longer fasts, and a low carb diet with plenty of protein, non-starchy vegetables, leafy greens, and a fair amount of healthy fats. Saturated fat is not unhealthy in the absence of excess insulin, especially when if comes from healthy animals eating natural diets. In the absence of carbs, the body uses ketones for energy which rely on fat burning metabolism. This is called keto-genesis which is a very natural and a much cleaner way of generating energy.
