“Where we kind of set ourselves apart is we really like to get into the experimental side of things,” Western added. Besides growing blends of radish, kale, and broccoli, he also grows more non-traditional microgreens like lupine, nasturtium, and sunflower. “The fact is there’s a lot of other fun colors, textures, and tastes out there,” he remarked.

Western utilizes his backyard space to grow additional produce. And through the City of Minneapolis’ garden lease program, he also rents a city lot.

“One of the things that we’re adding this year is a youth apprentice program,” Western stated. His wife is a teacher, and through her school, Western was able to teach students about growing microgreens and involve them in the planting process. “And then I came back two weeks later, and we got to harvest those microgreens,” he stated.

Students learned how to incorporate microgreens into meals, and were presented with such choices as blending them into a fruit smoothie, or adding them to an egg sandwich, bagel with cream cheese, or salad. “It really was a cool experience to see,” said Western.

Through the youth apprentice program, Western hopes to have two to three youth earn a paycheck while learning about farming. A message that he feels is not shared enough, particularly in communities of color, is that there are more careers in agriculture aside from working in the dirt. Western plans to work in topics of soil health, plant nutrition, as well as the process of planning a business and aspects of economics and marketing.
